Flower Power!

We decorated these breath taking cupcakes for Lauren's special birthday celebration. Each cupcake is topped with 3 hand made fondant roses and leaves.
We have been apart of Lauren's celebration for 3 years now and every year has been spectacular. You may have seen her cake on our website 322. Tea Time the tea cup with the lobster on top. She has enjoyed many amazing parties as I have seen her gorgeous invitation cards with amazing color theme palette.
Flowers aren't just for a lil princess,
Here are some of our floral favourites. For Angela and Jeff's 20th wedding anniversay, we decorated this photosheet cake with an array of flowers and roses.
Yes, the photo is edible too.

For a 30th birthday party celebrated at the Pawn restaurant, we splashed this #30 shape cake with some darling magnolia flowers.

See i told ya flowers got some serious POWER:)

This ones for you Jr's!

Every so often I get a super surprise in the mail box. I received a sweet thank you card from CIS last week. It brought a huge smile to my face:) I have stuck all of my thank you cards on my office window. Receiving cards by mail is such a treasure since everything is done by email/ecards now adays.


As I read the Thank you card, "The cake and cupcakes were a huge success and really helped add a WOW factor to the day" Eeeeek....I realized that I left out our Jr. cupcakes out of our Big Day at School blog. How could I have left them out, they were such a huge part of the celebration. We decorated 119 dozens of them = 1,428 Jr's. to be exact. I'm sorry for not including you into the big news my sweet Jr's:) This blog is dedicated to you.

Here are our Jr's freshly baked and cooling down in our baking trays.

We then organized and boxed them into our window boxes
Then iced all 1,428 of them & topped them off with our rainbow sprinkles.
And if you're wondering why you never saw our Jr. cupcakes before, its because we just launched them about a month ago. Our Jr's are available in an assorted flavors of your choice.

Surprise!

Surprise BEAR, Happy Birthday! We threw a surprise birthday party for my step father "BEAR" last night. I love surprise birthday parties. Sometimes I think I enjoy the surprise more than the birthday person because i get to design a super dooper fun cake for them.

You're probably wondering why there is a bear sitting in a back pack. Well, my step father's nick name is "BEAR". It was just a name that popped up one morning during breakfast and ever since then, he's been "Bear". Don't worry, he's the care bear type not the grizzly bear:) I know its hard to tell when the bear is holding up a sign saying "Don't touch my back pack"Grrrrrrr:)

Why a back pack????well it's because Bear never goes anywhere without his best friend the "Back pack". Whether it be a 5 minute walk to the super market or to a formal dinner, his trusty back pack is always with him. Sometimes I think he was born with a back pack attached to his back. It doesn't matter where he goes, the back pack is always with him.


See, I told you he's not a Grizzly Bear:)
Cheers to 50 fabulous years of back packing and many more to come.

All in One

As promised, here is a photo of the Clam Cake we did for our Hot Tuna Party.The entire clam and seashells were all hand made with Fondant. Everything including the sand is edible.

I have so many exciting things to share. I couldn't just stop at the Clam Cake, so I decided to post an "All in One" special feature:) From Cakes, Cupcakes, Classes, Cookies, Havaiana Slippers all the fun stuff. Hope you enjoy this potpourri of goodies:) And yes, I did say Havaianas......slippers & cakes are a sweet combo:) Read on....

We've had a whirlwind of classes. I had to blog about our Course I students Pamela, Sirene, Deborah and Natasha. Here they are on their Course 1 graduation day.


Our marathon decorators, Pamela, Sirene and Deborah moved forward to Course 2 the day after their Course 1 graduation. After 4 days, they graduated from their Course 2 class and will soon be starting our New Fondant and Gumpaste class.

For a special 22nd birthday celebration, we decorated this unforgettable Carousel Cake & Cupcake Tower. The birthday girl wanted something truly original for her first birthday celebration in Hong Kong. Now you see why I couldn't hold back on showing you all our goodies:)

And here are a pair of Havaianas I'm sure you haven't seen yet:) The entire slipper is edible including the signature Havaiana straps.

Hot Tuna!!!

No, I"m not a cake, but can you make me into one:)
That was basically the the request given to us by these 2 brothers who planned an extravagant surprise birthday party for their father's 60th birthday at the Watermark restaurant. Not only did the cake have to look like this Tuna, it also had to be 4 feet long. So then I just snapped my fingure and said no problem bros, VOILA,Here's your fish!

If only it were that simple:)
Here's the story of how our Deelite "HOT TUNA" came to life. The "Hot Tuna" bro's requested 3 flavors; Choco, Vanilla and Banana. So we baked slabs and slabs of cake and carefully sculpted out the fish.

Then we covered the entire fish with fondant and shaped out the details.

After shaping, we slowly added color and texture and some more color and texture and finally our Hot Tuna came to life.

Then comes my favourite part, final detailing. We added on all the fins, finished off the wooden board details and then added on the text.

Here is one of our biggest fans who heard about our Hot Tuna and stopped by to check it out.

Ofcoarse, our Hot Tuna story doesn't end here. Finishing the cake was just the beginning. THE MOVE........ After boxing this huge cake with a custome size box, just like our cruise ship cake, we had to walk it down the stairs b/c our cake couldn't fit into the lift.

Finally,after making it down to the ground floor. We slowly moved the cake into the van, packed thier Huge 60 balloon bouquet as well as another cake they ordered for their Grandma ( I'll blog about that next) and off went Hot Tuna and their party friends to Watermark restaurant.

Here I'am telling our Hot Tuna to behave and not to jump out of the box until the birthday boy arrives:)

Hush Puppy!

Yes! I'm a cake RUFF RUFF:)
We hand sculpted this adorable Hush Puppy for Stephanie. She saw our original Puppy Love cake and wanted her very own Hush Puppy cake for her birthday. To match her Hush Puppy theme, we also decorated some Hush Puppy photo cupcakes for her party favors.

BIG day at School!

Today, Chinese International School celebrated their 25th Anniversary and we got to be apart of this Grand Celebration.
The theme for their anniversary was the Chinese Drum & I was asked to design a spectacular cake for this memorable occasion.
This was a huge honor for me as I was once a student at C.I.S a loooooooooong time ago:) I took loads of photos and am so excited to share the ceremony with y'all.
We were up and going at 5:30 to pack the cake & deliver it to the school campus. Here's a quick shot as we're about to enter into the campus.
The ceremony kicked off with an Fantastic performance by the school orchestra and Dragon Dance Team.

And then came my part.....well except I wasn't physically apart of it, just in cake spirit. I had front row seat as I watch the cake enter into the Moon Gate. I must admit, I had butterflies in my stomach. The distance from the door to the table really wasn't that far. But when the cake was passed on from one group of people to the next, i had to hold my breath. So here goes....
If you can look closely in the right corner of the photo, the cake made it out of our van safely into the hands of Cake carrier group 1.

Then it got passed to 4 brave students or shall I name them Brave Cake carrier group #2

and then they walked & walked & walked and slowly made it to the table. Ok, you can breath now:)

After the cake cutting, I was over the moon. The cake was a huge hit! The event was absolutely perfect. And just when I thought it couldn't get any better, I got a HUGE SURPRISE! The Head Master (Mr. Faunce) and school events coordinator (Catherine) gave me a bouquet of flowers. That pretty much left be speechless and truly made my day even sweeter.

Cupcake Cookies Part 2

Wow, news gets around so quickly with this blog. It's so amazing.
We got a message from one of our fans Miss Scarlett:
"don't suppose we could talk you into adding a simple cookie recipe to one of your blogs some day? I love your work. It inspires me to make pretty, edible things :)"
As requested, here is our recipe and some sweet tips on how to make these yummy in the tummy treats. If you plan on giving them to a friend, make sure you make extra as your friends will probably ask you for more:)

Here is a sugar cookie recipe that is easy and so far full proof for me.
1 cup butter
1/2 cup sugar
1 large egg
1 Tablespoon vanilla extract---> DO NOT SKIMP, buy the real vanilla extract
3 cups all purpose flour
1/2 teaspoon baking powder
-preheat oven 350 degrees or 180 Fahrenheit. Put it on convection oven mode or in simple terms fan mode.
1.mix sugar and butter until creamy
2. add in egg and vanilla
3. blend in flour and baking powder until well blended
Now here's the trick, don't use the dough right away. Roll out your dough into a sausage and wrap it in cling wrap. Just like how they do with Pillsbury ready made cookie dough.
Refrigerate for 1 hour or freeze for 30 minutes. Then its ready to roll and cut out your shapes.
Once you cut out the shapes and stick your cookie sticks in, its ready to bake for about 10-12 minutes.

Icing:
16 ounces icing sugar
3 tablespoons of meringue powder
1/3 cup warm water
mix all together and its ready
Coloring: The best type are color pastes Wilton Brand b/c the drip water type---1) adds too much liquid into the icing making it really watery 2: the color just doesn't come out as nice.
Name of the Colors I used: Wilton Color :rose, sky blue, leaf green, lemon yellow, red red
Look for Wilton Brand coloring, Meringue Powder in any of your specialty food stores or if you're in the neighborhood in HK we got it. Oh and one more thing...Wilton also has the pretty white cookie sticks available. If you can't find them, try the bamboo skewers. I know it just doesn't look the same but its the best way around it if Wilton is not avail. in your area.

Cupcake Cookies!

We Baked, Decorated and personalized these cupcake cookie favors for
Daniela's birthday party.
I had so much fun doing them that I thought I'd share the process with you.
First we cut out and baked the cupcake shaped cookies with lollipop cookie sticks. Yes, I'm so crazy about cupcakes that I want to turn cookies into cupcakes:)
Then we iced them with Cookie-Royal Icing. We used royal icing so that it would harden completely.
Then I drizzled them with our famous Rainbow Bright sprinkles & outlined cupcake shape.
We then piped out each person's name, snuggled them into a cookie bag and tied a pretty bow on it.
Awwwwwww aren't they SWEET:)
